The Minotaur is a race of beings said to be part human and part bull, possessing a more human-like upper torso, and a more bull-like head and lower torso.

Prior to the events of Mortal Kombat: Armageddon, it was revealed that the Shokan placed a curse on their long-time enemy, the Centaurs, turning them into Minotaurs. While their overall appearance didn't change much, they now only had two legs instead of four.

Clearly, this was just a way to make Motaro work as a playable fighter in the game's fighting engine.
